Sound test should work 100% perfectly, if it doesn't for a table, please post specifics.
As you can see from the report below, there is only one table that you can access the sound test on where it is even feasible to use it on because of the attract mode music constantly playing. This is regardless of the Ops menu settings being configured to turn off all attract music and sounds, and have the volume interlock disabled and with the main volume turned all the way down at the ROM load screen. None of these setting have any effect, which makes the sound tests inaccessible to useless. I also included the service messages that are always popping up on the tables that get the dot most frequently.
  • AFM: Can't test in Beta 16b
  • CC: The train runs constantly adding the mechanical noise in the back ground; even disabling the train in the ops menu does do anything. Once you enter the Sound Test menu the sounds begin with the setting on running, which auto advances the test noises + music to the next one in the list. There is a missing sound: Track 1, Sound 2 (T.7 04); unless this is the train noise that is already on repeat :-/

I recall asking Farsight about the missing CC track and that's how the real game has it, so not a bug.
Most of the rest of these sound like the Menu music is the problem, and turning it off would solve most of the audio issues.
Not sure why the mech noise is playing for the train, maybe Mike knows since he coded that up.

The attract mode music is intermittent. One build will have it, the next won't play it continually, another will have overlapping sounds. It's a real mess trying to track the bugs re: sound and art, they have definitely been pushed to the back left burner as performance and game play ones took priority.
