This info from the vpforums post I stumbled across. Some will not work in TPA because of the lack of physical cabinet buttons. Particularly in attract mode.

Easter eggs
- Enter the initials MOO in the High Score list to hear cows moo´ing.
- Catapult three cows. The next time you get the video mode it will be save the calves, where the children are replaced by calves.
- Mortal Kombat lines: shoot the right ramp two times in a row for "Toasty!", three times for "Fatality". Sometimes "I challenge you!" is heard.
- Push Fire button during video mode to clear the screen of birds (if you have troll bombs, of course).

- One of the items you can shoot with the catapult is a cow.
- A cow is seen on the backglass.
- The peasants says that the King has taken their cows.
- Default initials for Grand Champion and Multiball Madness Champ is MOO.
No Fear
- Shooting ramps consecutively will make Skull from No Fear appear. Skull is also one of the catapult attacks.
- Sir Psycho declares "Again!" randomly during castle demolition.
Other tom-foolery
- Tournament mode: Insert credits and hold both flipperbuttons for a couple of seconds before you press Start. The display will confirm that the next game will be in Tournament mode (all random awards will be equal).
- During Attract mode, press the following sequence: B, 18L, 1R, 3L, 1R, 6L, 1R. That spells RCF, and shows the credits for Medieval Madness.
