If you want to pause your game during gameplay for a much needed toilet break, to put the kids to bed, to let your partner know that you still love them more than the game itself...
DO NOT PAUSE (options button) AND THEN PRESS THE PS BUTTON TO ENTER BACK INTO THE PSN SCREEN. - this will cause your game to unpause and you will lose the ball. The pause menu will still be on screen when you enter back into the game, but the ball will have drained.
DO press the options button, carefully place the controller somewhere where the PS button will not be tampered with. The pause will work for an indefinite amount of time.
NOTE: Please make sure you have set the power save settings on your controller to OFF - or to the amount of time you may be away from Pinball Arcade. I think the default setting is 30 mins. If the controller switches off - you will lose your ball.
The Share button will also automatically pause the game for you... and the ball will stay in play.
Sorry for the rant. Hope it helps someone.
