Nope. You cannot modify existing trophies. The conditions for a trophy need to stay constant once that trophy has been released because it would be unfair to anyone who has received the trophy already if we somehow changed the conditions.
So if you want to get the season 6 and season 7 trophy, you need to make sure you own all of the tables in that season; otherwise, you will never be able to get that trophy.
That's how it should be, but it has happened in the past. I know Overwatch had a trophy requirement changed when they changed how Mercy, one of the characters, works. Also, Towerfall Ascension changed a number of their trophies, lowering some requirements and entirely changing another one.
As Zabu noted, that is not always true. Trophy requirements have occasionally changed. I am guessing you are SOL if you don’t own the delisted DLC but it is possible they relax the requirement to be only available tables from Season 6 and 7.
