Two that I'd love to see are Roller Coaster Tycoon and Austin Powers. LOTR and Addams Family are a given for me from your list.

How expensive would the Spider-Man license be (although Zen has it right now)? Great tutorial by Bowen:
Very expensive and hard to obtain. Even Zen Studios has stated that the Spider-Man rights is a nightmare to manage and maintain. They had to go through a lot of hoops just to get their table onto the Andriod and iOS platforms.

I will admit that some I only played thanks to a game (Haunted House and Cue Ball Wizard thanks to Microsoft Pinball Arcade, and Police Force thanks to Pinball Jam. Victory is quite obvious) and others (Apollo, Red & Ted's, Spy Hunter, Jack*Bot, Laser War, Pac-Man, Space Invaders and Doctor Who) I never even played, but I'd definitely love to see those.

I want X-Files too. But I'm afraid we are in the minority on that one. It doesn't seem very popular. But I love the sound and theme on that one.

I know the feeling. I just got my first pin a couple of weeks back (thread to come, I swear!) and of course, a few days later, another dream pin at a great price became available.

Zen doesn't have the license for this particular version. Zen only has spiderman off of the Marvel Franchise, not The Stern Table and sounds and characters from the movies depicted. Still though I would love to see all the stern tables in TPA but copyright stuff is too ridiculous. And that's unfortunate. Especially when there aren't that many places that gave pinball tables these days.

Unfortunately, it's super unlikely. Recently Stern was interested in doing another run of them because it's a very popular table. Unfortunately, the licensing fees were much higher than they were initially, because they're no longer interested in making promotional materials for the Raimi Spiderman. If Stern can't manage to do another run of them, I can't imagine that Farsight can.
